As a professional fermenter and microbiome fixer I rarely find an article that surprises me - but this one surely fits the bill! Would love to send you (the author) some of my wild fermented krauts because I always feel that studies done on inferior krauts, that are mass produced, leave so many benefits on the table. I work the same way my great-grand mother made her krauts (no added cultures, no plastic buckets, but fermented in glass barrels) and I think there are leagues between commercial fermentation, that claims to be authentic and actual handcrafted ferments.
